Lectins: are they harmful, and does cooking fix them
Lectin-free diets treat beans as a source of gut damage, yet that damage was seen in animals fed isolated lectins or raw bean flour, and in 21 trials of cooked pulses people lost 0.75 lb (0.34 kg) more weight over 6 weeks. The real hazard is raw or undercooked beans, which cause nausea, vomiting and diarrhea within 1 to 3 hours, and in lab tests soaking and boiling inactivated lectins completely in all but four of the foods tested.

What to do with this
Soak dried beans for at least 5 hours and boil them for at least 30 minutes. That is the FDA advice quoted in a lab study where soaking and boiling inactivated lectins completely in every tested food except elderberries, chickpeas, nigella seeds and tomatoes. Raw chickpeas had shown no lectin activity in the standard test, only in a more sensitive version of it.
Do not cook dried beans from raw in a slow cooker. The same FDA advice warns against it. In lab work reviewed elsewhere, microwaving was unreliable for common beans, and an hour at 95 C cut lectin activity by 93.8 to 99.8 percent.
Raw or undercooked beans make people sick quickly, which is a different matter from eating cooked beans. Symptoms start within 1 to 3 hours, and China recorded 124 kidney bean incidents affecting 7,526 people between 2004 and 2013. Kidney beans in confirmed UK poisonings held 3,200 to 102,000 lectin units per gram, and no agreed safe threshold exists.
Many foods on lectin-free lists tested negative in the standard assay on raw samples, including green lentils, mung beans, rice, wheat, barley, chia, linseed and sesame. Raw potatoes, tomatoes and peppers showed 26 to 826 units per gram, against up to 26,526 in raw legumes.
Some people make antibodies to dietary lectins, 7.8 to 18 percent of 500 people tested depending on the lectin. Neither antibody study linked the antibodies to symptoms.

The bottom line
Beans and lentils have modest measured effects in trials, including an LDL cholesterol drop of 5.4 mg/dL (0.14 mmol/L) on about 4.6 oz (130 g) of whole pulses a day across 38 trials. The lectin worry that holds up is about raw and undercooked beans, and proper soaking and boiling deals with it. We found no trial of a lectin-free diet, so claims that one helps the general population rest on animal and lab data.

From the Fabaceae family, samples of beans (black, borlotti, fava, kidney, lima, pinto, rashti, white), fresh green beans (broad, edamame, haricot vert, horse), lentils (beluga, brown, red), soybeans, sugar peas, and sugar snaps had lectin activities of 208–26,526 HAU/g. Adverse symptoms generally occur within 1–3 h after consumption of insufficiently prepared beans and include nausea, vomiting, diarrhea, and occasional abdominal pain [19]. Laboratory confirmed cases of kidney bean poisons in the United Kingdom reported the concentration of active lectins in these incidents between 3200 and 102,000 HAU/g, and considered the range between 400 HAU/g and 3200 HAU/g as possibly toxic [20]. In the absence of standardized procedure (freeze-dried or not), standardized assays, reference materials, and proficiency tests, we cannot establish a common threshold level.

Except for elderberries, chickpeas, nigella seeds, and tomatoes, all samples showed a total inactivation of lectins after preparation...The handbook “Bad Bug Book—Foodborne Pathogenic Microorganisms and Natural Toxins” published by the FDA includes a study by Bender and Reaidi [48] that found a complete destruction of the toxin after 10 min (100 °C) of boiling, but then further adds that consumers should soak the beans for at least 5 h and boil them for at least 30 min to ensure that lectins are completely destroyed [48]. They also encourage the avoidance of using slow cookers that usually do not reach adequate temperature for destruction of the lectin [32].

Boiling legumes for one hour at 95 °C reduced hemagglutinating activity by 93.77–99.81% [19]...Microwave ovens on the other hand, are not an effective method for lectin deactivation. Though microwaving destroyed hemagglutinins in most legume seeds, it did not significantly affect lectins in common beans [25]. Additionally, fermentation over 72 h has been demonstrated to destroy almost all lectins in lentils (Lens culinaris) [26].
