Kidney beans: a modest LDL drop, and a raw-bean toxin to respect
The strongest evidence behind kidney beans is about cholesterol, and it comes from pulses as a group. A meta-analysis of 38 randomized trials in 2095 adults found that about 4.6 oz (130 g) of whole pulses a day for a median of 6 weeks lowered LDL cholesterol by 5.4 mg/dL (95% CI 3.1 to 7.3; metric: 0.14 mmol/L, 0.08 to 0.19), with kidney beans not analyzed on their own. The part that needs real attention is cooking. The FDA says as few as four or five raw kidney beans can trigger symptoms from the lectin phytohaemagglutinin. It advises boiling the beans for at least 30 minutes and never using a slow cooker for them or for dishes that contain them. White kidney bean extract, sold as a starch blocker, is a different product. In a meta-analysis of 6 placebo-controlled trials, all with serious methodological flaws, its 3.9 lb (1.77 kg) weight difference did not reach significance (95% CI 7.3 lb (3.33 kg) lower to 0.73 lb (0.33 kg) higher).

The bottom line
Iron absorption from beans was low in every study here. In stable-isotope studies in young women, only 2.5 percent of the iron in whole red bean porridge was absorbed, and 200 mg of bean polyphenols cut absorption by 45 percent, all from single meals. In 29 young Brazilian adults eating 3.5 oz (100 g) of cooked common beans, absorption was about 0.41 percent. As a protein food they did less in the short term. In 56 young adults, ounce-equivalent servings of kidney beans, tofu, peanut butter or nuts gave a smaller gain in whole-body protein balance over 8.5 hours than beef, pork or eggs. For fullness they held up. In 35 older adults, a breakfast tortilla with 4.8 oz (135 g) of red kidney beans was as filling as one with 2.8 oz (80 g) of beef, with no significant difference in lunch or 24-hour intake. Processing changes the blood sugar response. In a 1986 study of just 6 people, canned baked beans raised glucose and insulin more than home-boiled beans, and in the lab their starch broke down six to eight times faster. In 17 adults with type 2 diabetes, red kidney beans with rice gave lower glucose than rice alone at 90, 120 and 150 minutes. The total area under the glucose curve was not significantly lower for kidney beans, although it was for pinto and black beans. Some signals are small or weak. A pilot trial in 8 healthy adults saw lower blood pressure 2 hours after 3/4 cup of red kidney beans than after rice. US survey data link eating about 2 servings of beans a day with lower BMI and body weight, an association that pools several kinds of beans and cannot show cause. An older meta-analysis reported common beans lowering LDL by 19 percent, mixing whole beans with extracts and using weaker methods than the 38-trial analysis above.
