Popcorn: a whole grain that lives or dies by the bucket

Popcorn is a whole grain, and whole grains are one of the few food categories with consistent long-term data behind them. In three cohorts covering 195 thousand people, the highest fifth of whole grain intake had 29 percent less type 2 diabetes than the lowest, and in the parallel analysis each daily serving tracked with 7 percent less coronary heart disease over 26 years. That is the case for popcorn, and it is a real one. What it does not cover is butter, oil, salt, sugar or the size of the container, which is where most of the difference between a good and a bad bowl of popcorn actually lives.

The bottom line

The container is not a metaphor. Cinemagoers given a large tub ate 45 percent more fresh popcorn than those given a medium one, and 34 percent more when the popcorn was two weeks stale and they disliked it. Labelling it low-fat or high-fat, tested on 287 people, changed consumption by nothing. So buy the smaller size and ignore the label. On acrylamide, the compound formed by heat, pooled measurements average 460 micrograms per kilogram across a tenfold range, and two patterns hold: microwave popping produces less than other methods, and sweet popcorn more than salted. Nobody has studied diacetyl or the coatings on microwave bags in anything we hold.
