Irish soda bread: two different loaves under one name

What decides whether soda bread matters for your health is mostly salt and which loaf you mean. Across 34 randomized trials in 3,230 adults, cutting salt by about 4.4 g a day for at least four weeks lowered systolic blood pressure by 4.2 mmHg. A 2.6 oz (74 g) slice of the US survey recipe carries about 329 mg of sodium, 223 calories and 16 g of sugars. That recipe is the sweetened version with sugar and butter. The British table has a plain homemade white soda bread with 2.3 g of sugars, 1.6 g of fat and 150 mg of sodium per 3.5 oz (100 g), against 21.9 g, 9.0 g and 445 mg for the US one. There is one record of each, and home recipes vary. We found no study that measured soda bread itself in people.

Soda bread rises on baking soda, so it skips the yeast fermentation that breaks down phytate, the compound in grain that holds on to minerals. In bran bread, two hours of yeast leavening cut phytate to about 40% and two days to 15%, and zinc absorption in 42 students rose as fermentation lengthened. That was bran-enriched test bread, so it applies most to whole wheat soda bread. Healthy women absorbed calcium slightly better from leavened bread than from unleavened cookies of the same flour, 0.703 against 0.652. For iron the answer is unclear. Low-phytate white bread raised serum iron twice as much as high-phytate whole wheat over two hours, 59 against 30 mcg per 3.4 fl oz (100 mL). Longer trials of fermented bread did not improve iron stores, and the review of 8 studies says no well-controlled human study settles it. Bread is among the main sources of salt in most countries, across 80 studies in 34. In a 4-month trial in 309 people from 89 Danish families, salt-reduced yeast bread lowered recorded salt intake by 1.0 g per 10 MJ. Measured in urine, sodium fell only in adults who also got counseling, by 0.6 g a day (95% CI 0.2 to 1.0), and no such fall was reported in children. Baked wheat foods carry acrylamide, averaging 136 mcg per kg across 28 studies of bread, cookies and pasta, and nobody in them measured soda bread. On allergy, pregnancy, children and medicines we have no card for this bread. The practical caution is salt: if you watch it, the plain loaf is the lighter of the two.

    In a third study, the effect of phytate hydrolysis through yeast fermentation and of Maillard browning on calcium absorption was investigated using leavened bread and underbaked and overbaked cookies, each made with intrinsically labeled wheat flour. Calcium absorption from cookies was not affected by the extent of browning and averaged 0.652 +/- 0.087. However, calcium absorption from bread in these same women averaged 0.703 +/- 0.108.
