Taco shells: more than double the calories of the tortilla

Per 100 g, baked taco shells carry about 476 calories and 22 g fat, against about 218 calories and 3 g fat in ready-to-bake corn tortillas, a shift that reflects water loss and oil uptake. Sodium rises from 45 to 324 mg per 3.5 oz (100 g). A small corn shell of about 18 g gives about 86 calories. The default US survey portion of 1.9 oz (54 g), three small shells, gives about 257 calories, 11.8 g fat and 175 mg sodium, and older USDA tables put one shell at 12.9 g. No study we found measures taco shells as eaten. In a randomized study of 40 adults in Soweto, nixtamalisation, the lime cooking that turns maize into tortilla dough, cut fumonisin B1 in moldy maize by 95%. That maize was eaten as South African porridge, and industrial masa for shells may behave differently.

The corn in tortillas, the dough shells are made from, gives up some of its minerals well, though these studies used soft tortillas, not fried shells. In a double-blind crossover trial in 10 women, about 35% of the zinc in fresh corn tortillas was absorbed, with or without added zinc. In a study of only 5 women, tortillas from a low-phytate maize gave 50% calcium absorption against 35% from ordinary maize, and low-phytate maize is not what shells are made from. Iron is the weak point. Mexican children aged 5 to 7 absorbed about 3.8% of the elemental iron powder added to masa tortillas. In Guatemalan girls aged 12 to 13, a tortilla and bean meal gave 5.5% with ferrous sulfate and 9.0% with NaFeEDTA, and the abstract does not give how many girls took part. A scoping review of 21 studies linked fiber-rich whole grain corn products to better blood lipids and glucose, and refined extruded corn products to worse metabolic outcomes. It gave direction only, with no pooled number, and did not study shells separately. We could not confirm an acrylamide value for taco shells from any agency source. Across 32 publications, dietary acrylamide showed no meaningful link with most cancers, with a borderline signal for kidney cancer (RR 1.20, 95% CI 1.00 to 1.45). Pregnancy is where the caution sits. Observational data from 53,870 mother and newborn pairs link the highest acrylamide blood marker to 20% higher odds of a small-for-gestational-age baby (OR 1.20, 95% CI 1.08 to 1.33), with acrylamide from all foods and smoking, so the share from shells is unknown. A case-control project on the Texas-Mexico border named fumonisins from maize among risk factors for neural tube defects in women short of folic acid, with no effect size given. We have no card on allergy or medicines for taco shells.
