Sprouts: the minerals stay put and the seed is the risk

Sprouting is sold as a way to make the minerals in grain easier to absorb. When that was measured with stable isotopes in 24 adults, wheat sprouted for 48 hours did not significantly raise fractional zinc absorption from breakfast flakes, while the same wheat treated hydrothermally raised it 1.1-fold. In the laboratory that sprouting cut phytate by 26% and raised zinc bioaccessibility 1.4-fold, and across the 36 adults in that study the laboratory gains did not predict what people actually absorbed. Broccoli sprouts do beat their own supplement form. At 200 micromol sulforaphane a day, fresh sprouts gave about 3 times higher sulforaphane metabolite levels in plasma and urine than a myrosinase-treated sprout extract. That trial states no sample size in its abstract, and what it measured is a biomarker rather than a health outcome. The sprouts in that trial were fresh and raw, the form the safety section below is about. Nothing on this page reaches the level of a meta-analysis of randomised trials, so read every number here as a single study. The thing most worth knowing about sprouts sits outside the nutrition column. It is contamination.

The bottom line

Two outbreaks in the autumn of 2024 put numbers on that. In Sweden, 100 people were infected with Salmonella Typhimurium and a matched case-control study linked illness to alfalfa sprouts with an adjusted odds ratio of 8.94 (95% CI 2.96 to 27.1), which is odds and not risk. Salmonella was not found in the sprouted seed samples taken from the producers. In Norway over the same months, 230 cases were identified, 33% of them were admitted to hospital, and sprouts carried a penalized adjusted odds ratio of 3.13, again odds from an outbreak investigation where the supplier self-checks came back negative. Washing the seed is not something to count on. A review of 146 laboratory studies published from 2010 to 2024 found no single disinfection method that cleared the seed. Pathogens sitting inside the sprout or shielded in biofilms survive it, and combinations of methods did better than any one treatment. That is bench work with no human outcome attached. The FDA advice follows from this, and it names the groups: children, older adults, pregnant women and people with weakened immune systems are told to avoid raw or lightly cooked sprouts of any kind. The words lightly cooked are the part people skip. One more caution comes from a single patient. A 59-year-old woman with pollen-food allergy had two anaphylaxis episodes needing epinephrine after meals with inadequately cooked soybean sprouts, and she carried IgE to the soy allergen Gly m 4. She ate sprouts again without trouble after the acid-suppressing drug she had recently started was stopped, which is one case report with no food challenge behind it, so the drug as a cofactor stays unproven. The credit side is modest and worth stating plainly. Chapattis made with 7.5% sprouted fenugreek flour lowered glucose and insulin responses over 120 minutes against a white flour control in 18 healthy lean adults aged 18 to 25. That was one meal in a pilot-sized crossover, and the food was a composite bread rather than sprouts on their own. Broccoli sprout extract at 25 or 100 micromol a dose for 7 days produced no abnormal results across 32 kinds of hematology and chemistry test in 12 healthy adults. That is a week of tolerance for an extract, at doses below the 200 micromol a day that the absorption trial fed. No card in our set gives an upper limit for sulforaphane from sprouts or from extracts, and the amounts named on this page are what trials fed, not an intake to aim for. The EU register lists the broccoli sprout antioxidant claim and the wheat sprout eye health claim as non-authorised, so neither may appear on a label there. We have no USDA composition entry for sprouts in this cohort, so there is no per-100 g table above.
