Green beans: nearly always studied as part of something else

Green beans are hard to write about honestly, because the studies keep measuring the plate rather than the bean. The lutein trial that raised serum lutein by 37 percent in four weeks fed green beans together with pumpkin and sweet corn, 180 g a day between the three of them. The cookware trial fed 350 g a day of mixed vegetables. In the trial with small children, green beans were the control arm. One thing does belong to green beans alone, and it is a warning rather than a benefit. Across 95 botulism patients in Turkey over 35 years, home-canned green beans were the single commonest source, every implicated food had been canned at home, and 18 of those 95 people died.

The bottom line

If you can vegetables at home, green beans carry the worst record in the evidence we found. Low-acid vegetables need pressure canning to a tested recipe, and this is a place to follow your national food safety guidance rather than a method handed down in the family. Ninety-five patients, a mean 26.9 hours from the meal to the first symptoms, 19 percent of them dead. Commercial frozen and tinned beans do not carry that history. Everything else here is gentler and less certain. Cooking vegetables without water in multi-ply cookware raised blood vitamin C and beta-carotene, and so did cooking them in an ordinary pan. Only the waterless group showed oxidised LDL falling and urinary potassium rising, in a two-week study whose total number of participants the abstract never states. Take that one as thin. With no group sizes and no effect sizes, how far anything moved cannot be said, and what was tested was a specific multi-ply cookware set rather than a way of cooking. Nothing in it is a reason to buy a pan. Under 2 mg of lutein a day, from 180 g of green beans, pumpkin and sweet corn eaten together, lifted serum lutein by 37 percent in four weeks. Twenty-nine people, and the two arms were not randomised against each other, which is why that one sits at C while the cookware trial sits at B. Macular pigment density did not move at all. The eye benefit people expect from this was measured directly and failed to appear. For a parent the most usable finding on this page is that serving a green vegetable six times over six weeks raised how much of a different green vegetable 2 to 4 year olds ate, from 53 g to 91 g. It worked whether the repeated vegetable was spinach or green beans. What they said they liked did not change. What they ate did. One last thing to hold loosely. Australian food tables record measured iron in green beans falling 30 to 50 percent across the last century, and the people who compiled that comparison treat it as a question about older methods and sampling rather than a finding about the vegetable.
