Dumpling: the wrapper decides more than the filling
A dumpling is a wrapper around a filling, and the best documented thing about it is what that packed dough does to starch. In a randomised crossover, 17 adults with type 2 diabetes ate 50 g of available carbohydrate as 165 g of Italian potato dumplings and as 90 g of white bread on alternate days. Plasma glucose was lower after the dumplings at 90 minutes (p < 0.05), 120 minutes (p < 0.01) and 150 minutes (p < 0.05), with no difference in the insulin response. Seventeen people ate each food once. The result belongs to that dense boiled dough, and a fried pork dumpling is a different food. In the laboratory arm of the same trial the starch of those dumplings broke down about 30 percent less over five hours with alpha-amylase, and electron microscopy showed a structure compact enough to keep digestive enzymes out. That arm is in vitro work, so it offers a candidate explanation rather than a proven one, and it did rule out resistant starch and viscosity.

The bottom line
What goes inside decides the rest, and the evidence changes food every time it moves. In 15 healthy adults in Hong Kong, a salted meat rice dumpling was tested against glucose alongside 22 other traditional Chinese foods, and the authors placed it in the middle band, with 6 of the 23 foods low, 10 moderate and 7 high. A glycaemic index panel gives a band. It is not a number you can apply to what you fold at home. Twenty healthy young adults wearing continuous monitors were still above baseline more than 210 minutes after apricot dumplings, later than most of the ten foods tested. That was an open label study, a sweet dumpling, and sensor glucose rather than blood glucose. The honest use of it is to distrust the standard two hour measurement for dense filled foods. Children are where a filled dumpling has been measured most carefully, because fortified flour is a policy question. Eighty-six Indonesian children aged 4 to 8 absorbed 15.9 plus or minus 6.8 percent of the iron from dumplings made with wheat flour fortified at 60 mg iron per kg. Adding zinc sulfate to the same flour cut that to 11.5 plus or minus 4.9 percent (p < 0.05). Zinc oxide left it alone at 14.0 plus or minus 8.9 percent. Twenty-nine Chinese toddlers aged 24 to 31 months fed pork-filled wheat dumplings absorbed 6.4 percent of the iron when half of the 4 mg came as NaFeEDTA, against 4.1 percent from ferrous sulfate alone. Each of those is one isotope-labelled test meal, in children with their own iron status. Caution here runs through the filling and the kitchen. In 307 matched pairs from two Korean hospitals, people reporting more noodles and dumplings had significantly more gastric cancer. Those diets were recalled after diagnosis, and the food group mixes noodles in salty broth with dumplings, so neither can be separated. Of 1979 retail samples collected in Shaanxi between 2008 and 2012, 2.5 percent of the dumpling samples carried methicillin-resistant Staphylococcus aureus, against 2.3 percent of chicken and 0.6 percent of pork, on small numbers within each category. Those dumplings are cooked before eating, which removes the organism though not a heat-stable toxin already formed. A 102-year-old man developed Listeria in his blood after eating frozen dumplings, and typing cleared the dumplings: his isolate was serotype 1/2b, ST5, and the freezer held 1/2c, ST9. The single United States reference record for this food is a frozen potato or cheese dumpling, so there is no composition figure here for anything made by hand.
