Burrito: a composite dish the surveys know better than the trials

One trial has actually put a burrito in front of people. Twenty-seven healthy men ate the same burrito-style meal four ways, and against a plant-based meat alternative the grain-fed beef filling gave a plasma triglyceride response 0.346 lower (95% CI 0.692 to 0.0004) and the lamb 0.458 lower (95% CI 0.880 to 0.034). The beef interval stops a whisker short of zero, the authors call the differences subtle, and what was measured is blood over four hours in healthy young men. Everything else known about burritos comes from counting what people eat. Burritos and tacos supply 4.3 percent of all the sodium eaten in the United States, the fifth largest source in the national diet, behind pizza at 5.3 percent, breads at 4.7, cold cuts at 4.6 and soups at 4.4. That figure rests on one 24-hour recall each in 7081 people, it merges burritos with tacos, and it describes a population rather than your lunch. Sodium is the number worth carrying out of here. The FDA asks industry to bring average US intake down to 2,750 mg a day from about 3,400 mg now, through voluntary targets for food categories that include the restaurant and prepared dishes a burrito belongs to. That is a population goal aimed at manufacturers rather than a limit for one person, and the category chart is where a given dish gets its number. We found nothing that measures the sodium in a restaurant burrito itself. Among 3112 US children aged 6 to 11, burritos and tacos were the leading high glycaemic index food for Mexican American children, while pizza led for other Hispanic, White and Black children and rice for Asian American children. The glycaemic index there was assigned to a category of mixed dishes rather than measured in those children, and a survey like that describes what groups eat rather than what a food does. In 10 248 adults, burritos and tacos sat among the top ten sources of beef in the US diet, six of which are mixed dishes rather than cuts of meat. That says where beef hides, not how much beef your burrito holds. The hard caution on this page is nearly thirty years old and still unexplained. Sixteen outbreaks of sudden gastrointestinal illness in seven states in 1997 and 1998 followed school burrito lunches supplied by two unrelated companies and affected more than 1900 people. Nothing was ever shown to have been in the food. Eating burritos carried odds of illness of 2.6 (95% CI 1.6 to 4.2), and those are odds rather than risk. Illness came fast, a median 35 minutes, and ran a median 6 hours, with nausea in 72 percent of the 504 cases counted in North Dakota. The agent was never identified. Plant inspections, tracebacks and laboratory work all came back empty, and the investigators argue against mass psychogenic illness rather than proving a toxin. Warning labels moved opinions more than orders. Among 1235 US red meat eaters choosing online between a steak, a chicken and a vegetarian burrito, a health warning raised the share naming the steak burrito most damaging to health to 73 percent against 63 percent with no label (p < 0.05). The share who actually picked it did not differ between label conditions. That was a picture on a screen in a convenience sample, and the authors say real behaviour still has to be tested. School burritos, meanwhile, did change. Across 1.7 million student-selected entrees in six schools of one Washington State district, burritos improved on both mean adequacy ratio and energy per serving after the 2010 school meal standards. That was a before-and-after with no control district, and the variety of entrees offered fell by 44 percent. What is missing is most of a normal page. We found nothing on burritos for pregnancy, for medicines, for kidneys, or for what reheating does to one, and no dataset we hold covers the restaurant version at all.
