Olive oil is often described as though it contained none at all, and that is not right either. Every fat is a mixture. The honest version is that olive oil is one of the better-composed ones and that a tablespoon is around 120 calories, which is the number people underestimate when they pour by eye.

Measuring it once or twice is a useful exercise. Most of us pour considerably more than we think, and in a pan the difference between a measured tablespoon and a free-hand pour is often double.

None of this is an argument for cooking without fat. Fat carries flavour, makes vegetables worth eating and helps you absorb the fat-soluble vitamins in them. It is an argument for knowing roughly what leaves the bottle.
